I set out again on my quest for the perfect Malasadas, this time I planned ahead and decided that the dough needed to rise for the better part of the day with a mid-day punch-down/turn-over. The above pic is before the "rise"...... ......here it is after the rise...big diff', huh? Once again my awesome deep fryer kicked some ass wit' dem Malasadas. I set it at around 355 deg. F for a cook time of about 8 - 10 minutes 4 balls at a time. Speaking of "balls", check out how I squeeze the dough into the oil with my bare hand, which I learned watching some people make it at a carnival (Star of the Sea carnival I think?). ![]() ![]() After spending a day in Napa, we decided to do some shopping at 99 Ranch in Daly City to get some ingredients for my Sarah-inspired jiu yihm gai yihk (spicy salt n' peppa chicken wings) and some other necessities. After chuckin' away a paycheck on "necessities" (my g/f includes chocolate pudding under that category), I was really curious what the Dim Sum King was up to at night since dim sum is traditionally a brunch/lunch affair. Wouldn't you know it...they serve dim sum all day and all night!!! I hit the motherf*ckin' jackpot, yo!!! F*ck tradition, dude! I'm gonna go eat mah dim sum at night since there's absolutely no crowd to deal with, parking was ridiculously easy, and dare I say that the dim sum came out "fresher" since they don't have to stockpile dishes to meet demand. My g/f got me a deep-fryer for my birthday since she was soooo convinced I kept yackin' about how much I wanted one (???). Not that I'm not grateful (oooo...double negative...bad grammar day), but it's kinda like gender role reversal...Oh wells, got one now so might as well make damned good use out of it. There's always room for error especially the first "batch" of anything you make for the first time. My crack at malasadas (Portuguese doughnuts) was no exception. OK...Lesson #1: it takes about 2 hours for fuggin' dough to rise. I haven't read a damned recipe that told me this. Almost all the recipes say "let it rise till it doubles". Which then leads me to Lesson #2: If you keep checking in on the "rising" dough, your mind plays tricks on you like a devil sitting on your left shoulder egging you on saying, "It's doubled in size! Really! Cook it already, damn you!" I cooked about half of the batter, and the remaining batter I didn't cook filled out the bowl when I checked this morning!!! F*ck me! Just wanted to thank all the peeps who remembered my b'day and wished me well! I certainly ate well last night thanks to a surprise dinner-for-two at Harris Restaurant in the city. ![]() Instead of some cornfest in Brentwood, my g/f surprised me with a weekend getaway trip to Cache Creek in Brooks, CA (near Sacramento...kinda). Can I just say that it's changed tremendously since the days in college where I spent half my rent money on the blackjack table...back when you had to pay a $0.25 tax/fee per hand. It now kinda reminds me of Green Valley Ranch in Vegas, popularized by the Discovery Channel show American Casino. I wish I could say that I won a sh*tload of greenbacks, but I rarely gambled this trip...only a few bux into some quarter slots and a $10 bet on the pass line of their "California Craps" table, which uses cards to determine the "point". You still role die, but depending on which color die is higher (red or blue) determines which of two cards gets flipped over. It's an odd twist, but helps negate a lot of cheating when people roll. So basically we ate and ate and ate and ate....... The good news is that my month-end close went (for the most part) quite smoothly, although I stayed past 12:30am on Wednesday. I'm not as bitter this time around because our year-end bonus (that's right...from FY2003!) is arriving today. I'm so tempted to go out and buy me a nice big-screen, rear-projection, DLP-powered, HDTV-ready, monstrosity of a TV, but I can hear my g/f buzzin' around my ear sayin', "You need to save up for a phat bling-ring, dickhead!!!" Ah wells, at least that "purchase" won't depreciate in value like my dream-machine *sigh*. One note of irritation, and I'm done for today. This morning, my bathroom-stall neighbor was grunting and sighing ever time a log left the processing plant, if ya know what I mean. It got really irritating quick! ![]() I finally got a chance to read an article in the SF Chronicle that I saved from yesterday, and I have to say that I'm pretty sad and furious at the same time. As one of three sons of immigrant parents, who have sacraficed everything for us kids, I was deeply affected by the losing battle the Cuevas family fought.
